A time to abandon the rigour of meal planning throughout the busy work week, and just freestyle the day a little. A great, flavor packed breakfast recipes is the breakfast quesadilla. You can mix and match and try a variety of combinations, but this Crab Breakfast Quesadilla seems to hit all the right notes (especially for you seafood lovers). Ingredients
- 2, Whole Eggs, Beaten
- 2 tbsp. Skim Milk
- 1 tsp. Lemon Juice
- 1/2 cup Maryland Lump Crab Meat
- 1 cup Shredded Cheddar Cheese
- 1 tsp. Old Bay Crab Seasoning
- 4, 6-inch Flour Tortillas
- 2, Scallions, Sliced Thin
- 2 tsp. Unsalted Butter for cooking
Instructions
Combine the beaten eggs, milk, lemon juice and mix them thoroughly. In a small saute pan, cook the egg mixture until scrambled and and chill. Top the cheddar cheese with the scrambled eggs, lump crab and slices scallions. Sprinkle each tortilla with the Old Bay Seasoning. Fold the tortillas in half and wrap each in saran wrap individually and refrigerate for up to three days. To cook, melt butter in a non-stick saute pan brown the quesadillas on each side; serve hot.
